Ingredients
  • 2 yellow squash
  • 2 large zucchini
  • 1 red bell pepper
  • 2 large sweet potatoes
  • 6-8 small purple potatoes
  • Ratatouille sauce inspired by The Fitchen
  • 3 cloves of garlic
  • 1 red bell pepper
  • 1 15-oz. can of diced tomatoes
  • 1 tbsp. lemon juice
  • 3 tbsp. olive oil
  • 1 tsp. salt
  • 2 tsp. freshly ground pepper
  • 1 tsp. dried oregano
  • 1 tsp. turmeric
  • 1 tsp. sage
  • 1 tsp. cayenne pepper
Instructions
  1. Preheat the oven to 375° F. Blend ingredients for sauce and pour ¾ of the sauce on the bottom of a 12” cast iron pan. Slice all the veggies into thin rounds. Create a spiral of alternating veggies in the cast iron, then drizzle remaining sauce on top. Bake for 50-60 minutes, until the smell is too enticing to wait any longer.
